Mickey Mouse Birthday Cake

My son 3rd birthday, i decided to bake a Mickey mouse birthday cake for him as he loves Mickey so much!! Sure he was, he enjoyed the cake and wanted to blow the candle over and over again.


Ingredients:
4 eggs
1/2 cup cake flour + 1 teaspoon of tartar cream
1/2 cup sugar
2-3 drops of vanilla extract
Mickey mouse cake mold
Betty crocker white and chocolate frosting
Strawberry jam

Methods:
Separate the egg white and egg yolks. Use a stand mixer, beat the egg white and sugar at high speed until it looked like foam and fluffy. Transfer to another bowl.(A)

Beat the egg yolks at lower speed, when it looks yellownish and a bit foamy, add in cake flour and vanilla extract. Combine with (A) and mix them gently.

Pour the batter into the mickey mouse mold. Bake 2 layers so you can layers up the cake. Bake at 350 C for 20 minutes or until the toothpick came out clean( ovens may vary).

Cool the cake. Spread one layer with jam/ frosting of your choice ( i used strawberry jam) and top it with another layer. Carefully frost the entire cake with the white and chocolate frosting. Then you can draw out mickey's face using decorating tip.

If you prefer cool cake, put it into refrigerator before serving.

Note: This cake is not as big as uou see, if you want to make a bigger cake, please double the ingredients.

葱油饼

Finally, i got a chance to post the pictures of this biscuit. It is flanky and crispy. Please refer to my other post for the details step by step instructions.

It is best to serve it while it is warm. Enjoy! You can eat with porridge, egg or other variety.

Donut


This baked donut is not as tasty as the oil fry one. But it is more healthy.
This recipe is adopted from little corner of mine.
Serving size: 12-18 donuts


Ingredients :

(A)
1 cup all-purpose flour
1/3 cup sugar
3/4 teaspoon baking powder
3/4 teaspoon baking soda
1/4 teaspoon salt

(B)
1 egg
1 tub (150 gm ) plain yogurt
1 tablespoon canola oil
2 teaspoons lemon juice
1 teaspoon vanilla extract

Toppings: semi-sweet chocolate chips

Method :

1. In a big bowl, combine (A).

2. Push the flour to the side and in the center, add in (B). Mix (B) well with a spatula and mix the flour in to just combine. Set aside.

3. Divide the chocolate chips at the bottom of each of the donut tube pans. Divide batter among pans. Place the batter only half full so that you will see donut hole when baked. 3/4 full will not be able to see any donut hole when baked.

4. Bake at 400°F for 10 minutes or until a toothpick inserted near the center comes out clean. Cool for 5 minutes before removing from pans to wire rack.



 

糯米糍 (Sweet Potato Glutinous Rice ball)

Serving size: 12
  1. One big sweet potato, peel the skin and cut in dice. Boil a pot of water and cook the sweet potato until soft. Drain and remove the excess water. Mash it. Let it cool down.
  2. Red bean paste 300g ( I bought store make red bean paste), divided into 12 portions and form into individual ball.
  3. Grated coconut ½ cups.
  4. Glutinous rice flour 1.5 cup, sugar 1/3 cup, condensed milk 3 tablespoons, oil 2 tablespoons, water 170ml. Combined it with (1) and mix thoroughly. After that , transfer the dough to a oily grease glass bowl. Microware for 3 minutes, stir and microwave for another 3 minutes. Continue until the dough is cooked. Let it cool down. Use a spoon to take out a portion of the cooked dough and put it onto a lightly grease cling wrap and cover. Then, press the dough flat. Place a red bean paste ball onto it. Work the dough until it covers all the red bean paste. Roll it on the grated coconut. Repeat until all done.
  5. Serve and enjoy!

Jelly

Crystal Jelly powder 1 packet, cook accordingly to the package instructions. Arrange desire fruit into jelly mold. Once the jelly is cooked, transfer immediately to the mold. Keep in refrigerator for several hours or until firm. Serve and enjoy!
