Birthday cake
This is the birthday cake that i made. Is it pretty?? It used the roll cake/ sifone cake recipe. The only different is you have to bake two 9 inches cake and stack them together.

Angry bird cupcake ..eww.eww..
After i saw a posting about angry bird cupcake, i was like i must make this for my son. Yea.. he loves it and he was helping me making them and giving some instructions. The next day, when he was enjoying his angry bird cupcake for breakfast, he was like :" Mom, we are going to make spiderman cupcake right?" I was like. "No..i do not know how to make it." Then he said," You know how to make everything..." Guess i have to make spiderman cupcake next time ... Well, fancy cupcake really triggers his appetide, he has eaten for quite a few since they are ready!
Recipe adopted from Mimi bakery house
Ingredients:
3 cold eggs
1 3/4 cup all purpose flour
3 tsp baking powder
150ml fresh milk (can substitute with soy milk if you child has dairy allergic)
220g castor sugar
1 tsp vanilla extract
Methods:
1. Put all the ingredients and mix until well blended.
2. To make the body
3 tablespoon of red color batter
3 tablespoon of blue color batter
3 table spoon of yellow color batter
3 tablespoon of black color batter ( i did not have black color so i use chocolate powder)
3. To make the peak
2 tablespoon of orange color batter
4. To make the eyebrown, use the batter of black color.
5. To make the belly
3 tablespoon of original batter
6. After all done, steam for 15- 20 minutes or until done.
Note: I double to recipe to make 16 cupcakes. I kept the bottom part original color and layer some red, yellow or blue color on top of it to make the body.

Cake pop
This is a popular and easy to make dessert to bring to a party or as treat during holiday.
It is easy to make. I made it using the cake pop mold. For the cake recipe, please refer to roll cake or muffin post.
After the cake is baked, cool it down. Melt the chocolate chips in the microware. Dip the lollipop stick into the melt choclate and press it into the center of each cake ball. Repeat till all cake balls are done.Let it cool for a while so that the cake can stick to the stick.
After that, dip the cake ball into the melting chocolate and coat it evenly. Repeat until finished. Let it cool down if you would like to decorate with other color of candy melt. Or else sprinkle it with color sprinkle.

Mickey Mouse Birthday Cake
My son 3rd birthday, i decided to bake a Mickey mouse birthday cake for him as he loves Mickey so much!! Sure he was, he enjoyed the cake and wanted to blow the candle over and over again.
Ingredients:
4 eggs
1/2 cup cake flour + 1 teaspoon of tartar cream
1/2 cup sugar
2-3 drops of vanilla extract
Mickey mouse cake mold
Betty crocker white and chocolate frosting
Strawberry jam
Methods:
Separate the egg white and egg yolks. Use a stand mixer, beat the egg white and sugar at high speed until it looked like foam and fluffy. Transfer to another bowl.(A)
Beat the egg yolks at lower speed, when it looks yellownish and a bit foamy, add in cake flour and vanilla extract. Combine with (A) and mix them gently.
Pour the batter into the mickey mouse mold. Bake 2 layers so you can layers up the cake. Bake at 350 C for 20 minutes or until the toothpick came out clean( ovens may vary).
Cool the cake. Spread one layer with jam/ frosting of your choice ( i used strawberry jam) and top it with another layer. Carefully frost the entire cake with the white and chocolate frosting. Then you can draw out mickey's face using decorating tip.
If you prefer cool cake, put it into refrigerator before serving.
Note: This cake is not as big as uou see, if you want to make a bigger cake, please double the ingredients.

Chocolate/Vanilla Layer Cake
I made this cake using the recipe of roll cake which you can find here:
To make this cake , you need to double the ingredients. When you have done prepared the batter, divide them into two portions. One for chocolate flavor, the other half for vanilla flavor.
Melt the chocolate chips or just use cocoa powder, then mix well with the batter.
Drop in 2-3 drops of vanilla into another batter.
Grease two 9 inches round baking pan. Then transfer each batter into the baking pan. Bake as directed.
When it is done, let the cakes cool down. Meanwhile, slice some kiwi or strawberry. Set aside.
Beat the heavy whipping cream (i mix it with some milk so it did not taste too milky but light and fluffy) till firm.
Mix the pre-slice fruits.
Trasnfer one part of the cake to a flat surface (or the container that you wish to store the cake). Then spread some whipping cream. After that, transfer the other part and put on top of the bottom layer.
Spread the remaining whipping cream onto the cake, and sprinkle some cocoa powder on top of it to make it more colorful.
It tastes best after you cool it at the refrigerator. Personally i think it tasted the same as the store bought cake.

Easy version Tiramisu
Since i have some heavy whipping cream left over, i thought of making an easy version of tiramisu after insipire by a restaurant.
But my tiramisu does not turn out as good as i want it to be. The cream is just too heavy ( i meant the taste), i cannot take it as i am not a milk person. I think i am going to try light cream next time. Maybe it will be more similar to which i ate at the restaurant.
I used cocoa poweder instead of coffee. It is not looked facny though, just sprinkle some cocoa power on top of it after i spread the cream. :-8

Grated Coconut Sifone Cake
Ingredients (A):
1 cup grated coconut
1 teaspoons salt
Ingredients (B):
7 eggs
2/3 cup sugar
¾ cup cake flour
2 tablespoons oil
1 teaspoons salt
2-3 drops vanilla extract
2-3 drop green coloring (or any color of your choice)
Methods:
Grease the pan. Mix the ingredients (A) together and press it firmly at the bottom of the fluted tube pan.
Using two clean mixing bowls, separate the egg white and egg yolks. Combine sugar and egg white; beat it high using an electronic hand mixer until it becomes thick, white and fluffy. After that, stir in egg yolks. Add in cake flour slowly and mix well. Lastly, put in salt, oil, vanilla extract and green coloring. Mix well using hand mixer at low beat.
Transfer the batter into the fluted tube pan (contains grated coconut at the bottom).
Bake at 350 F for 30-40 minutes or until golden brown. You can use a toothpick or chopstick insert into the cake, if it comes out clean and nonstick, then the cake is consider well cook.

Roll Cake~蛋糕卷
This roll cake tastes amazing.. just like the birthday cake that i used to eat. The skin is not perfect, as i did not roll in onto a piece of cloth ( i could not find one at the time i made it :-( ), the aluminium foil peel some of the skin off.

1) 3 egg yolks, one whole egg, Rum one teaspoon, sugar ¼ cup, corn oil ¼ cup, milk ¼ cup
2) All purpose flour 6 tablespoons, corn starch 3 tablespoons, baking powder ¾ teaspoons, mix together.
3) 3 egg white, sugar ¼ cups, white vinegar ½ teaspoon
4) Heavy whipping cream, vanilla extract 2-3 drops, milk ½ cups
5) Fruit (of your choice, can be Kiwi (1), strawberry(2-3)
Methods:
In a two clean mixing bowl, put egg yolks, whole egg and rum into one of the clean bowl.
A) In another bowl, put the egg white and white vinegar. Using a hand mixer beat the egg white. While beating, slowly add in sugar. Beat the egg white until white and fluffy.
After that, beat the egg yolks mixture, and while beating, add in sugar slowly. Beat till the mixture is white and fluffy. Stir in corn oil, beat for 2 minutes. Then, stir in corn milk. Beat for another 2 minutes or until well combined.
B) Put the #2 ingredient into the egg yolks mixture slowly. Mix well.
Combine A and B, do not over stir, gently mix them together.
Pour the mixture into a rectangular baking pan and bake at 350 F preheat oven. It takes roughly 20 minutes to bake. You can use a toothpick to insert into the cake. If it comes out moist, then the cake is not done yet.
When the cake is done, lay the cake onto a piece of cloth, and roll it while still warm. Let it sit to cool down.
While waiting for the cake to cool down, beat the ingredient #4 till white, fluffy and a bit harden. Mix it with desire fruit.
Unroll the cake and spread the cream all around, then roll it back again.
Put in refrigerator and serve it cold. I always found that it is taste best when cold. But you do not need to cool it if you prefer warm cake.
